- 2 cans (5 ounces each) tuna in water, drained well
- 1/3 cup mayonnaise
- 1 celery stalk, finely diced
- 2 tablespoons minced red onion
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon black pepper
- 1/4 teaspoon kosher salt
- 8 slices sandwich bread (sourdough or white)
- 8 slices sharp cheddar cheese
- 2 tablespoons butter for grilling
- Optional: tomato slices, pickle chips
