- 2 1/2 pounds beef stew meat (chuck), cut into 1 1/2-inch cubes
- 1/3 cup all-purpose flour
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 cups low-sodium beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 pound Yukon gold potatoes, cut into chunks
- 4 carrots, cut into chunks
- 2 celery stalks, sliced
- 1 cup frozen peas
- 2 tablespoons cornstarch + 2 tablespoons water (optional)
