- 1 tablespoon oil
- 1/2 yellow onion, finely diced
- 2 garlic cloves, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1–2 teaspoons minced chipotle in adobo
- 1/2 cup vegetable broth or water
- 2 tablespoons soy sauce or tamari
- Juice of 1 lime
- 8 corn or flour tortillas, warmed
- Toppings: shredded cabbage, pico de gallo, avocado, cilantro, crumbled cotija or vegan cheese
